In the video above, Master Chocolatier Paul A. Young shares his unique recipe for a rich and indulgent simnel slice, based on a layer of chocolate fudge topped with marzipan, a mincemeat ganache, and a colourful selection of chocolatey treats.

This is the sixth video in our new Ultimate Chocolate Recipes series, where Paul demonstrates eight deliciously decadent recipes to satisfy your sweet tooth, from real ale chocolate truffles to an indulgent chocolate tiffin.

INGREDIENTS

For the fudge base:

  • 100g salted butter
  • 175g light muscovado sugar
  • 50g golden syrup
  • 15ml vanilla extract
  • 160g 72% dark chocolate
  • 3 medium free-range eggs
  • 50g plain flour
  • 100g marzipan

For the ganache

  • 150ml double cream
  • 200g sweet mincemeat
  • 250g 70% dark chocolate

To decorate

  • 100g white chocolate, melted
  • Selection of your favourite chocolate Easter eggs and treats

METHOD

  1. Preheat the oven to 175C/gas mark 4 and line a 30 x 20cm baking tin with baking paper.
  2.  For the base, gently melt together the butter, sugar, golden syrup and vanilla extract until bubbling and smooth.
  3. Tip in the chocolate and mix until fully melted. Add the eggs and mix well, then stir in the flour.
  4. Pour into the lined tin. Grate over the marzipan, covering the mixture evenly.
  5. Bake for 25 minutes then remove and allow to cool.
  6. Meanwhile, for the ganache, warm the cream and mincemeat together over a low heat. Add in the dark chocolate and mix until all the chocolate has melted.
  7. Spread this mix over the cooled fudge base and refrigerate for two hours.
  8. Spread the melted white chocolate all over the slice.  
  9. Decorate by smashing some of your favourite chocolate Easter eggs and treats and scattering over the top.
