In the video above, Master Chocolatier Paul A. Young shares a simple recipe for his Seedlip chocolate sour, the perfect way to incorporate chocolate into your drinks at any party this summer.  Seedlip is a non-alcoholic spirit, distilled from herbs, spices, peels and barks, but if you prefer something with alcohol, replace it with a spirit of your choice.

This is the final video in our Ultimate Chocolate Recipes series, where Paul demonstrates eight decadent recipes to satisfy your sweet tooth, from chocolate tiffin to real-ale truffles.

INGREDIENTS

  • 100ml water
  • 150g caster sugar
  • 1 tsp lemon juice
  • 200g chopped dark chocolate
  • 70ml Seedlip Spirit (or your choice of alcohol)
  • Ice
  • Orange and pink grapefruit zest

METHOD

Simmer the water and sugar for 6 minutes, or until fully dissolved.

Add the lemon juice.

Add the chocolate, whisking well until smooth.

Allow to cool thoroughly, once cold whisk again.

To shake the cocktail: add 70ml Seedlip spirit to a cocktail shaker with ice and 35ml of chocolate syrup.

Shake really well and strain into a frozen glass.

Add a sliver of both orange and grapefruit zest to serve.

Last week’s episode shared Paul’s recipe for delicious chocolate simnel slice, perfect for Easter.
