Raw food gets the Shoreditch treatment at Essence Cuisine, where the prettiness of what’s on the plate contrasts with a raw-looking decor of cement plaster finishes and a concrete bar. Matthew Kenney, star chef of the American raw-food scene, has devised menus that are 100 per cent meat, dairy, gluten and refined sugar free, but packed with vibrant flavours and creativity: think pad thai made with kelp noodles and tamari almonds, heirloom tomato lasagne (with courgette taking the place of pasta), plus cold-pressed juices and biodynamic vegan-friendly wines....
